The importance that the opening of OKUDA in Paris has for me transcends the mere occasion of a famous restaurant setting up its first branch outside Japan. More deeply, I see it as a contribution to a better comprehension of the true Japanese culture. The refinement, the dedication and the courtesy exemplified in the concept of wabi-sabi : there lies, for me, the veritable heart of Japan. In the choice of materials as that of the styles employed, I’ve tried to remain true to this essence. A few examples : the « noren », this hemp and cotton curtain one bows under to renter the restaurant ; the delicate sliding door almst soundlessly being opened ; the union of flowers, plants and water filling the observer’s heart with admiration for nature.
